To Question 1, I think you should try writing at least 1000 words a day. I would also advise you against writing multiple stories at the same time as I think it would be easy to "pollute" individual stories with ideas from another. In order to prevent the loss of your other ideas, you could write them down somewhere as they come to you for future reference.
To Question 2, you could share your work with a writer friend who's willing to review it. That way, you can get informed honest feedback.
